  • Handcrafted

    On a daily basis, our bagels are individually handcrafted with care through proper precision, technique, and a secret touch of our own. The dough is made from scratch at our facility with only the finest baking tools and machinery.

  • Kettle Boiled

    After the proofing process, our bagels are kettle boiled (with water) to effectively set the crust and interior before it enters the oven. We typically boil our bagels quickly, on both sides, for about 20-60 seconds.  The concept behind the boil is to create a barrier on the outside of the bagel, which hardens and allows for a chewy and dense texture within. The longer the boil, the thicker and chewier the crust and vice versa.

  • Proper & Scheduled Proofing

    To sustain the authentic taste and shape of our New York style bagel, we adhere to only the finest baking practices. We work hard to embody and maintain a palette of distinction, signature texture, and size. During the proofing process or the “resting period of fermentation,” we monitor our bagels to make sure optimal rising and shaping occurs.

  • Baked to Perfection

    After the quick kettle boil, our bagels are laid out on boards, placed in a revolving oven, and baked to perfection.
